Olive trees symbolize peace, longevity and continuity and are the most valued trees in the Middle East. It is fifth of the seven species, and can produce fruit even when it is more than a thousand years old. Olive oil was used in the Temple and as an anointment for kings. Today the oil is used for the Chanukah menorah and the Ner Tamid (eternal light). Ancient sources identify the olive tree as the "Tree of Life".
